Weekly Menu Nov. 18

Well, its been a while since I’ve planned ahead enough to make a weekly menu post! Now the real miracle will be if I can stick to it and cook dinner each night instead of crashing at 8pm.

Sunday: Flank steak pinwheels, mustard-garlic Brussels sprouts (done! recipe post soon!)

Monday: Plantain nachos/Burrito bowls

Tuesday: Roasted green beans, grilled chicken thighs

Wednesday: Eating out! Jason’s Deli-salad and GF soup.

Thursday: Burgers with remoulade sauce, garlicky kale with bacon

Friday: Leftovers, frozen soup, or Kitchen Sink Stir Fry (everything but the kitchen sink!)

This week, I want to run without foot pain. I have no specific plan in mind. The marathon training week is a cut-back week, which works out great for me.

Well tonight was a big bust. I knew I felt rough last night and today, the doc tested me for strep throat. No running until probably Thursday. I'm just going to assume my foot is healing while I'm resting. :)
