I’ve only tried this once and it was ok, but nothing earth-shattering. This time, I decided to try a mix of meat sauce and zucchini strips. I’ve always heard how mind-numbing lasagna can be. Boiling the noodles, making the sauce, making the cheese filling, etc. Well, I had an extra hour on my hands, so I jumped right in.
First, I started on the zucchini.
Mixed up the cheese filling. I included my own basil and parsley from our garden. The cheese is ricotta and some parmesan with one egg.
Time for layers
Bake 350 for 45 min.
Done!
Will I ever do this again? Probably. Is it going to be a weekly staple? no. However, I am interested in trying a complete veggie lasagna with some no-boil noodles. Stay tuned!
