Happy Thanksgiving week! I can’t believe this week is almost here. I keep thinking that I have all this time to get ready for the holiday season. Hold on to your oven mitts, the season is already here, kicked back on the sofa eating chips and watching the bowl games and parades.
I’m still doing a pretty fine job of “paleo week, party weekend”. But before I pat myself too hard, being sick means I don’t feel like putting forth the effort to make my favorite holiday treats (that I really only make once a year…so I truly enjoy them!).
Sunday: Salmon, Roasted broccoli with bacon
Monday: Plantain Nachos (oh my so good!!)
Tuesday: Date night! Ornament making and holiday kick-off.
Wednesday: Chili and baked potato
Thursday: White chicken chili at Mom’s house. Fueling for Black Friday year 36!!
Friday: Who knows? Whatever we can find assuming we survive Black Friday
Saturday: Family Thanksgiving. Mine will be all good things that are gluten-free.
Nothing planned. I’m not going to aggravate my lungs until the Runners’ World Run streak which starts on Thursday.
This week is all about being thankful. I’m thankful for my health, and that’s even more obvious when I’m feeling like I have been lately. So, I’m going to work on not taking anything for granted. At least I have limbs that move, eyes that see, a fussy pancreas that is still functioning somewhat, and a heart that is fitter than a 23 year old.
