A long busy day of weekend prep cooking is done!
Breakfast casserole, chicken thighs, apple sausage, sweet potatoes, chicken soup with lemons. I’m ready for a new week!
Here is my planned menu for this week.
Sunday-gluten-free recipe to rival Chick-Fil-A nuggets. (secret ingredient…pickle juice!!)
Monday: Shepherd’s Pie
Tuesday: Roasted chicken with artichokes and mushrooms and Brussels sprouts
Wednesday: Curried short ribs and carrots
Thursday: Shrimp scampi with roasted broccoli and mushrooms.
Friday: leftovers!!
After being sidelined again with flu, I’m working back into CrossFit and hopefully, a few miles this week. My only plan is 3 days of working out or running. That’s not very specific, but it all depends on how my lungs react. Think healthy thoughts!
