Meet Lola.
She and I whipped up a cheesecake, one of those no-bake kind.
I 8oz pkg of cream cheese-softened. It can be full, reduced, or no fat. Cream this with 1/2 cup of sugar or splenda.
Fold in 1 8oz bowl of Cool Whip. You can make your own..but I’m lazy tonight.
Add topping of choice.
So while that is chillaxin in the fridge, I am trying something called Pablano cornbread cups.
Start with Pablano peppers, cut lengthwise, seeds removed. Leave the stem or the cornbread will ooze out the end.
Make cornbread mix as you wish. Add 1/2 cup of cheese, 1 small jar of chopped chilies, and a small bunch of cilantro, chopped. Stir it all up.
Spoon cornbread mix in the peppers
And bake 400 for 18-25 min.
Now before I eat, I have to show off my new toy. A Le Creuset petite casserole. Now…this thing is tiny! 😀
I bought it to hold me over until I get a REAL Le Crusty. I do like the green. I may get a red to help my decision making easier 😉
Final product. Dinner is served.

Absolutely Divine! I am totally going to try out the poblano cups sometime.. I love me some peppers.
