Sunday Get-it-Together Day

We have a new store in town. I have heard of Fresh Market but I have never been in one. I wasn’t sure if this was an alternative to Whole Foods Market or if it was another store that would compete with Publix, my “regular” grocery store. On this rainy Sunday morning, I took a brief tour and was pleasantly surprised. I found a lot of my staples I normally get when I travel 1.5 hours to Birmingham every few weeks. I loved the salad bar, but I was confused on why the olive bar was so big. I mean, I love olives too, but that bar space could have been used for a hot food, bbq, or soup bar. Interesting. I’ve heard they have meat specials on Tuesdays so I will check back then.

Naturally, I jumped on the pumpkin coffee. It is a chilly rainy day and soup and pumpkin coffee just go hand in hand for a girl trying to be patient for fall. Power greens, bulk carrots and DRIED MANGO rounded out my first trip through Fresh Market. Those mango strips are amazing. I first tried them with Paleo Pacs. Those jerky, nuts, and fruit packs have these mango strips and I usually devour them first. Now I have just the mango to make my own fruit/nuts/jerky combo.

My finds from the Farmer’s market yesterday. Miss Emily’s eggs, beef, cabbage, okra, arugula, and kale.

I start my after-school tutoring job this week so I need a lot of food handy. My meal prep this week included a chicken and kale soup, breakfast sausage, frittata, grilled chicken thighs, roasted vegetables and sweet potatoes. I have breakfast, lunch, and after school snacks ready for a great week!
