Indian Spiced Pork Loin with Roasted Carrots

Can you believe that I have a new cookbook to talk about?? When the publisher contacted me about choosing a book, when I saw this one, I might have cheered a little. This one is from Danielle Walker and this book is leaping off shelves.Against All Grain is just what you would expect….real food, no grains. Protein, vegetables, fruit. And this recipe for pork loin roast was perfect for one of the coldest nights we have seen in 18 years. I could have crawled in the oven while this was cooking, but I waited patiently and was properly rewarded!

In the next couple of weeks, I will feature some recipes from Against All Grain that are Whole 30 approved or can be adapted.

I made a couple of changes from the original recipe. I roasted the carrots (and added half an onion!) with the pork loin and I used individual spices to substitute for garam masala since I did not have that.

The roast was PERFECT! Not too dry, still juicy and spicy. I loved the additional carrot treatment. They got nice and golden and their natural sweetness came through. This will be a staple in my Paleo kitchen. Thanks, Danielle!
