Dijon Sausage Potato Salad

I know summer is still a few weeks away, but I had a big craving for a savory potato salad. Spring is definitely blooming all it’s pollinated glory and allergies are attacking. I’ve had so much soup lately, I wasn’t looking forward to more of it. I wanted comfort food in the form of a cool salad. I had chicken sausage and potatoes, and I had Cooking Light bookmarked. This recipe looked great! The rest of the ingredients were easy to find in my local store. This was a FAST recipe to make which meant I could return to important matters….buying more tissues and allergy meds. Happy Spring!

Dijon Sausage Potato Salad

  • 6 cups diced red potato (about 2 pounds)
  • 1 (12-ounce) package smoked chicken sausage, quartered lengthwise and sliced (such as Gerhard’s)
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red onion
  • 1/3 cup Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  1. Steam potato, covered, 10 minutes or until tender.
  2. Place a medium nonstick skillet over medium-high heat until hot. Add sausage; sauté 2 minutes.
  3. Combine potato and sausage in a large bowl. Add celery and remaining ingredients; toss well to coat.
